LauraWe mentioned before that we have a rather new food scientist. Laura started here at NCA during the Expo and she will be doing a weekly post here about the science behind candy. You actually met Laura before, when she modeled the giant foam finger. She was new enough to take one for the team back then. She knows better now and said she would not help me with the blog anymore unless she got her own weekly column.

Okay, maybe she didn’t say that. All the same, here she is. We are delighted to have Laura educate us about the science behind the sweet stuff we love to eat. Welcome, Laura.   1. What a great addition to your blog! Laura has my dream job. If I had to do it all over again, I’d go into food science. But alas, my English degree only allows me to write about it.

  2. Patti, we need more people like Laura here. Not only is she a brainy food scientist, she is also really, really cool and I feel lucky to have lunch with her from time to time.
